The team draws inspiration from Asia and Oceania, weaving those influences into a menu that is both surprising and refined. The result is a cuisine that feels fresh, layered, and distinctly its own.
NOVO’s flagship offering is the five‑course NOVO Experience, priced at €79. Dishes change with the seasons, but the style is consistent: precise, vivid, and never predictable. Recent highlights include hamachi with sanbaizu, shiso, raspberry, and yuzu; Oosterschelde mullet with green curry, meiknol, green asparagus, and bok choy; and a scallop course with Acquerello rice, cauliflower, Parmesan, hazelnut, and coffee bean. The menu also features Poulet des Landes with piri piri, yellow carrot, vadouvan, courgette, pommes soufflés, and poultry jus. Desserts are equally inventive – Agrumes combines Licor 43, kumquat, lavender, orange, and yogurt.
For a lighter introduction, the SPHINX Experience (three courses, €52.50) is available Tuesday through Thursday, with weekly changing dishes tuned to the season. A separate Sweet & Cheese Experience at the dessert bar offers refined house‑made desserts or a three‑course cheese adventure.
NOVO New Dining earned a Michelin Recommended distinction in 2026, a nod to its consistent quality and creative direction.
