The story
Since opening in November 2018, Restaurant Oxalis in Wervershoof has earned a steady place on the Dutch fine dining map. Chef Geoffrey van Melick runs this intimate establishment—complete with a greenhouse and terrace—with a philosophy that prizes proximity: “What is good doesn’t have to come from far.”
Van Melick’s credentials are anything but local. He trained in some of the world’s most demanding kitchens: Apicius (one star), ‘t Nonnetje (two stars), Arzak (three stars) in San Sebastian, Amber (two stars) in Hong Kong, and The Fat Duck (three stars) in the UK. He also won both Dutch and world cooking championships. That global experience translates into a Modern French cuisine that balances classical foundations with a light, contemporary touch.
The menu evolves with the seasons, built around pure, natural ingredients from the region—shellfish, poultry, Dutch lamb are particular favourites—supplemented by the best products from further afield when needed. The kitchen offers two tasting menus, each designed to let the ingredients speak.
Oxalis has been selected by Michelin since its first year and is included in the 2026 edition with a Recommended award. Gault & Millau has also recognised the restaurant since 2023, and Oxalis is a member of Euro-Toques Nederland, a network that champions traditional craftsmanship and short supply chains.
The atmosphere is calm and personal, the service attentive without ceremony. For a meal that feels both grounded and accomplished, Oxalis delivers precisely that.
