The story
On the edge of Giethoorn’s famous canals, De Lindenhof has earned two Michelin stars for its precise, warm-hearted cooking. The restaurant describes its own philosophy as “boundless hospitality combined with an unforgettable gastronomic experience” — and that spirit begins with patron-cuisinier Martin and his wife Marjan. Together with maître-sommelier Pieter-Jan and head chef Lennard, they have created a place where guests feel at home the moment they step inside. The interior is cosy and intimate, with suites overlooking a lush garden that stretches all the way to a stork’s nest. A long kitchen garden, planted beside the lodge rooms and the Chef’s Cottage, supplies a palette of scents, flavours and colours that directly inspire the menu.
The cuisine at De Lindenhof is firmly anchored in classic French traditions, yet it draws constant inspiration from the surrounding waterlands of Weerribben-Wieden. Natur, culture and the area’s rich fauna and flora translate into pure, subtly executed dishes. The menu offers several paths: the daily-changing four-course Lindenhofmenu, the eight-course surprise menu “Martins Ziel & Zaligheid”, and the twelve-course Chefs Parade. À la carte selections include langoustine with vadouvan and pear, turbot with fenugreek and leek, and a parade of small desserts. For a deeper dive, guests can order a signed copy of De Varende Chef, a book that collects iconic recipes and images of Giethoorn.
The experience extends well beyond the dining room. Guests can stay overnight in the spacious Chef’s Cottage, complete with Auping beds and direct access to the vegetable garden. During warmer months, the restaurant offers a watersafari through Giethoorn’s reed beds and lakes, equipped with binoculars and a gastronomic plateau to enjoy on board. It is a fitting extension of a restaurant that treats every detail — from the wine list curated by Kruithof Wines to the helicopter landing pad for the most dramatic arrival — as part of its generous, unhurried welcome.
