The story
At Bistrot Regent, the kitchen is led by chefs Robbert and Huib, who draw inspiration from the French culinary tradition. They work exclusively with seasonal, top-quality ingredients, focusing on preserving the essence of each product. Sauces are central, and classic French techniques guide every dish. The result is a menu that changes with the seasons, offering crudo, pâté, agnolotti, and roasted meats – all prepared with precision.
In 2023, Michelin awarded Bistrot Regent a Bib Gourmand, highlighting its excellent value for money. The restaurant also holds 13 points in Gault & Millau and a place in the Lekker 500. The wine list, curated by Heleen, features French domaine wines, many from artisan and biodynamic producers – from lesser-known estates to established names.
The current menu (as of the restaurant’s final service period) includes dishes like white asparagus with hazelnut vinaigrette and beurre noisette mousseline, Simmentaler beef tartare with bone marrow, and agnolotti with ricotta and broad beans. Mains such as roasted ribeye and poached rabbit with cognac cream sauce show the kitchen’s command of French bistro classics. Desserts – a Dame Blanche, a brûléed lemon tart, a strawberry-rhubarb millefeuille – provide a sweet finish.
Bistrot Regent served its last meals on June 28. Owners Robbert and Heleen look back with gratitude on nine years of hospitality, personal stories, and loyal guests. The restaurant’s legacy – a small, warm, French-inspired bistro in Nijmegen – remains a benchmark for thoughtful, value-driven cooking.
