The story
Just outside Nijmegen, at the Kerkplein in Malden, Restaurant Lime offers a style the team calls “casual fine dining.” The kitchen is creative and driven by the moment, working with seasonal produce to build menus that shift with the year. Diners can choose from four to seven courses during lunch or dinner, each menu including amuses and friandises. Recent dishes have included a cold asparagus soup with roasted scallop and a spring stew of beet, gooseberry, and shi-take with sake beurre blanc. The wine list focuses on European bottles, selected to complement the food, and the cocktail program adds a lively note.
Lime’s roots go back to 2005, when the team opened Le Marron in the same location. That restaurant earned a Michelin star in 2006. Over time, the concept evolved into something more free and relaxed, but the commitment to pure, top-quality ingredients and warm hospitality remained. In 2026, this approach earned Lime a Michelin Recommended distinction, a recognition of its consistent, refined cooking in an unpretentious setting.
The kitchen is led by experienced chefs who also mentor new talent, creating a learning environment that keeps the cooking fresh. The restaurant partners with Kiemkracht64, a local sustainable farm that grows produce regeneratively, reinforcing Lime’s focus on quality and seasonality. Whether for an intimate dinner or a celebration, the atmosphere is welcoming and attentive—a place where modern cuisine feels both special and accessible.
