The story
At Bistro De Gieser Wildeman in Noordeloos, the approach is straightforward: seasonal Dutch bistro cooking, served without pretense. This is the more accessible sibling of the Michelin-starred restaurant next door, and it shares the same commitment to local products and precise technique. The bistro earned a Michelin Bib Gourmand in 2025, an award that recognises good quality, good value cooking.
The kitchen is led by chef Marco van der Wijngaard, who took over the estate in August 2025. Alongside his right hand, Dennis Steenbergen, the team focuses on craftsmanship and personal service. The bistro menu changes regularly and is written on a chalkboard. Dishes are built around what is in season: think white asparagus with ham and egg, wild sea bass with a tiger milk dressing, or a Dutch lamb main course.
The atmosphere is relaxed and welcoming. The team describes itself as a tight group who share a belief that good food starts with attention to taste and craft. There is a terrace by the water, and the bistro is open for dinner from Tuesday to Saturday. A three-course menu is available for €50 per person, with vegetarian options on request.
