The kitchen, led by Chef Kenny Friederichs, focuses on light, sustainable cooking deeply connected to the surrounding nature – from briny seafood to local vegetables sourced from trusted producers. The guiding philosophy: “Where the earth meets the sea.”
Chef Friederichs, who has led the kitchen since 2024, brings experience from multiple Michelin-starred kitchens. His approach avoids trends; instead, he prioritises seasonality, local partnerships, and durability. The result is a modern cuisine that feels both grounded and surprising.
By his side, Restaurant Manager and Head Sommelier Stan Kerckhoffs, an SVH Meestergastheer, curates a wine list that matches the kitchen’s style. With over twenty years at Latour, he selects both classic labels and finds from small vineyards. The pairing is considered essential to the full experience.
Inside the kitchen, Pastry Chef Lieke creates desserts and friandises that end each meal on a high note. The whole team, including Assistant Restaurant Manager Beau, works to create a seamless, memorable experience from welcome to farewell.
Latour’s menus change with the seasons, highlighting vegetables, herbs, seafood, and meats. A dedicated vegetarian menu – the “Diner voor liefhebbers van groente en fruit” – showcases dishes like green asparagus with pipian verde, kohlrabi with sea lettuce and wasabi leaf, and Opperdoezer ronde potatoes with Oosterschelde seaweed. House-made sourdough, croissants, and a thoughtful selection of appetisers set the tone.
The restaurant regularly hosts special events: Sunday Vibes with guest chefs, Cellar Dinners featuring exceptional bottles from the wine cellar, and other seasonal happenings.
