The story
In the former ECI Cultuurfabriek, a landmark industrial building in Roermond, chef Edwin Soumang and his partner Bethany DeLong run Restaurant ONE. The setting is raw and real—brick, steel, and high ceilings—a space that feels both expansive and intimate. Lunch is served on Friday and Saturday, dinner from Wednesday to Saturday, and when the weather cooperates, the garden and terrace open for al fresco dining.
Soumang grew up as the son of a chocolatier in Beek and trained at the Hotelschool in Wageningen. He then worked in the kitchens of three-Michelin-starred chefs Georges Blanc, Michel Roux, and Heston Blumenthal, among others, in the Netherlands, France, and Spain. It was during his travels that he met DeLong, and together they opened ONE in 2007. The restaurant earned its first Michelin star in 2010, recognition it has held ever since. In 2026, ONE was awarded a Michelin star for high quality cooking, a testament to the kitchen’s consistency and ambition. Soumang has also been named Chef of the Year by the JRE (Jeunes Restaurateurs d’Europe) and won the international JRE Talent Award in 2017.
The menu changes with the seasons, drawing on produce from the restaurant’s own kitchen garden. Colours turn yellow, red, and orange with sweet tomatoes, courgette blossoms, and shellfish in summer. The kitchen’s style is described by colleagues as “eigenzinnig, talentvol, stijlvol en avontuurlijk” – idiosyncratic, talented, stylish, and adventurous. Beyond the main dining room, ONE offers private dining, a Chef’s Table, and the option of a wedding celebration. For a more informal experience, the team also runs Bistro TWO in the city, focused on great food and a relaxed mood.
