In the heart of Roosendaal, Joke and Joey van Heesbeen have transformed a historic coach house, Het Koetshuis, into Restaurant 1857. The building’s character remains intact: an authentic bread oven and the original horse trough are still present, creating a setting that blends old-world charm with contemporary elegance. This is not a place for a casual meal; it is a space designed for a complete culinary experience.
The kitchen focuses on French cuisine, expressed through tasting menus that change with the seasons. Dishes like corvina with cucumber, sea lettuce, and kombu, or a signature course of lobster with white asparagus, magnolia, and shiitake, showcase a modern, ingredient-driven approach. The menu is available in 4 to 7 courses, with vegetarian options offered alongside the standard menu.
The open kitchen is the heart of the restaurant. At the chef’s table, a counter that borders the pass, guests watch the chefs at work. The chef serves this table directly, explaining the preparation of each dish and answering questions. It is an intimate way to experience the kitchen’s rhythm, from prep to plating.
