The story
Tres, located in the Entrepotgebouw at Kop van Zuid-Entrepot in Rotterdam, is an intimate 16-seat restaurant where chefs Emy Koster and Michael van der Kroft invite guests to an evening without a single thought of yesterday or tomorrow. The restaurant presents a single playful set menu that changes with the seasons—Winter, Spring, Summer, Autumn—each priced at €185. The menu unfolds in 18 servings: starting with snacks, moving to savory dishes from the sea and the land, and finishing with desserts and mignardises. A carefully chosen alcoholic or non-alcoholic beverage pairing is available to enhance the experience.
The kitchen works closely with the best producers and growers, showing what can be grown, harvested, fished, and foraged in the Netherlands. Every dish tells the story of the farmers and artisans who contribute to the restaurant’s identity. The guiding principle is “Complex without being complicated.” This approach has earned Tres a Michelin Recommended distinction for 2026, a recognition of its refined yet unpretentious country cooking and modern cuisine. The restaurant’s focus on local ingredients and precise technique makes it a standout in Rotterdam’s dining scene.
Guests are asked to keep an open mind, as the evening takes about three to four hours. The set menu is the same for all diners, allowing the kitchen to showcase the full range of Dutch produce. The atmosphere is intimate and unhurried, with counter dining and table service available. Tres is accessible by Rotterdam’s Watertaxi, arriving at dock Stieltjesstraat / Entrepot. Reservations require a deposit for the menu cost, and the restaurant kindly asks for notice of at least seven days for cancellations due to its limited size.
