The story
At Xīn in Rotterdam, the name itself sets the tone: "new." Chef Wong’s approach to modern Chinese cuisine is rooted in reimagining familiar flavors rather than reinventing them. His dishes walk a line between bold, explosive tastes and refined execution, offering a dining experience that feels both fresh and approachable.
Chef Wong’s path to this philosophy began in his childhood in Rotterdam. After culinary school, he refined his skills in some of the world’s most prestigious kitchens, including three-Michelin-starred La Pergola in Rome. That classical French foundation informs his technique, but the heart of his cooking remains anchored in Chinese traditions. At Xīn, he brings those influences together, letting each plate speak to a harmony of heritage and contemporary creativity.
Xīn offers a single chef’s menu at €80 per person, served per table. For groups of five or more, this is the only option – a setup that encourages sharing and conversation. The menu changes but consistently reflects Chef Wong’s modern take on Chinese cuisine, supported by an extensive wine list designed to complement each course.
The restaurant has earned a Michelin Recommended distinction for 2026, a recognition that aligns with its quiet confidence. The atmosphere is warm and understated, set within the Supernova hotel on ’s-Gravendijkwal. It’s a place where the focus stays on the food: no gimmicks, just precise, thoughtful cooking that invites you to taste something familiar in an entirely new way.
