The story
For more than 35 years, Japans restaurant Shiro in ’s-Hertogenbosch has been presenting Japanese cuisine as a form of art. The team believes a great dish should stimulate all the senses, and they prepare each plate with this conviction. Using the freshest seasonal ingredients, they offer both fish and meat dishes, all made in an authentic style.
The kitchen’s approach is best described as Kaiseki-ryori, a traditional multi-course dinner that is the Japanese equivalent of haute cuisine. This style balances taste, texture, appearance, and color. Dishes are carefully presented on selected plates that enhance the seasonal theme, often decorated with real leaves, flowers, and edible garnishes shaped like natural plants or animals. Only fresh, seasonal ingredients are used, making each visit a reflection of the moment in time. This dedication to craft has earned the restaurant a consistent recommendation from the MICHELIN Guide Netherlands for 30 years, a recognition it continues to hold.
Located in the cozy center of ’s-Hertogenbosch, just a few minutes’ walk from the station, Shiro is a member of the Organization to Promote Japanese Restaurants Abroad. The restaurant is open Tuesday through Saturday from 18:00, and reservations are required. On Fridays, Saturdays, and public holidays, only the course set menu is available.
