The story
In Schagen, chef Roy Strijbos and Marlies Baken run TOV, a restaurant that takes its name seriously: TOV stands for “good.” Everything about the place is built on that principle—good ingredients, good company, good evenings.
The kitchen is driven by a belief in twelve seasons. Every month, the complete menu changes. Strijbos and Baken choose the finest products of the moment, letting the calendar guide what arrives on the plate. The result is a constantly evolving expression of Modern Cuisine that never repeats itself.
Strijbos grew up in Haarlem, surrounded by the flavours of Indonesian, Antillean, Turkish, Moroccan and Surinamese home cooking. He trained classically in French technique, but his cooking is anything but narrow. “You can expect all kinds of flavours at TOV,” he says, “from classic French, to Mediterranean, to Asian.” The thread that ties it all together is respect for the product—he works with small, local producers who deliver the best possible ingredients, often from the rich landscape of North Holland.
Marlies Baken grew up on a farm in Groote Keeten, where the vegetable garden determined what the family ate. That early awareness of seasonality and provenance now shapes her approach to wine and cheese. She seeks out small wine growers and local cheeses, learning more with every bottle she uncorks.
The dining room is warm and welcoming, with outdoor seating for summer evenings. The restaurant is open Wednesday through Saturday from 17:30, and other times are available on request.
TOV’s commitment to quality has been recognised with a Michelin Recommended award. It’s a fitting nod to a kitchen that treats every month as a new season—and every dinner as a chance to share the best of what’s around.
