The story
In the Zeeland-Flanders village of Philippine, where the Netherlands’ first mussel harbour once operated, Auberge des Moules has been a fixture for 56 years. This is a place where seafood is the star, and the kitchen draws directly from the riches of the Zeeland coast. The Michelin inspectors have taken note: the restaurant earned a Recommended status for 2026, a quiet nod to the consistent quality and honest cooking found here.
Joris, Manon, and their team run the front of house with warmth and a genuine smile. The atmosphere is relaxed and unfussy – the kind of restaurant where you can settle in for a long lunch of Zeeuwse oesters, a half-lobster Belle-Vue, or the classic steamed mussels that the region is famous for. The interior is airy and comfortable, and in good weather the small terrace is in high demand.
The menu is rooted in Zeeland’s seafood. Starters include Irish Mor oysters, Perle Imperial kaviaar, and a crudo of langoustine with citrus and avocado. Main courses range from grilled gamba’s with langoustine jus to a classic rogvleugel (skate wing) with caper butter, or Zeeuws lam for land lovers. In spring, a dedicated asparagus menu appears, showcasing the local white asparagus prepared in the traditional way. All cooking is precise, letting the quality of the ingredients speak.
Auberge des Moules is open Wednesday through Sunday from noon. The team recommends booking ahead, especially for terrace seating. Whether you are a long-time fan of Zeeland seafood or discovering it for the first time, this is a destination worth the trip to Philippine.
