The story
Elea – ancient Greek for ‘olive’ – was a term used by Greek philosophers to denote renewal, freedom and challenge. It fits the cooking of chef-owner Takis Panagakis, who looks beyond classic dishes to create a modern, innovative cuisine with subtle Greek influences. The restaurant’s name reflects a kitchen that is both forward-looking and deeply rooted in the flavours of Greece.
Panagakis was born and raised in Greece, learning to cook with pure, fresh ingredients. He honed his craft at Michelin-starred restaurants including Basiliek in Harderwijk and Brouwerskolkje in Overveen. Together with his partner Bibi Kuyp, who brings experience from Michelin-starred De Zwethheul and Sea Grill, they opened Elea as a shared dream. Kuyp describes the restaurant as a place to give guests a lasting memory, with warm hospitality and personal service.
The kitchen offers a la carte, set menus, and a Chef’s menu of nine courses. Dishes change with the seasons but typically include Yellowtail kingfish with green apple, watercress and tarama; Dutch shrimp Saganaki style with tomato, fennel and salty plants; White asparagus with egg yolk, tsitsiravla and black onion; Langoustine fricassee with bergamot and dill; Quail with sofrito, morilles and trachana; and Lamb with artichoke, wine tops and raisin. Desserts like Rhubarb with rizogalo, ginger and cinnamon, and a Sweet Tzatziki with cucumber, dill and Greek yogurt close the meal. A vegetarian menu is also available, and the wine list features an impressive selection of Greek wines, from Assyrtiko to Xinomavro, as well as French and other European labels.
