On the Markt in the heart of Nootdorp, just outside The Hague, Restaurant Calva has found its new home. The name itself is a deliberate nod to the town: derived from the Latin word for “nut,” it signals both the location and the restaurant’s promise of authenticity and exclusivity. Owner Tom continues the Calva tradition here with palpable passion, offering a dining experience built on surprising flavour combinations, fresh ingredients, and personal, informal service.
Calva’s kitchen operates with a clear, confident philosophy. The menu is a five-course surprise journey called “De Belevenis” – The Experience – which changes every five weeks to follow the seasons. The cooking style is described as pure and simple, guided by a rule of at least “four spoonfuls” per dish, allowing each component to be fully appreciated. Rather than overwhelming a plate with flavours, the kitchen focuses on a play of multiple preparations and textures. The signature bisque is a constant presence, and the wine pairings—sourced in collaboration with partner PIT-wijnen—are a particular point of pride.
This refined yet unpretentious approach earned Restaurant Calva a Michelin star for high-quality cooking.
