A New Chapter on Bierkade

Resumé by 6&24 opened its doors on the Bierkade in The Hague in February 2023, the younger sibling of the established restaurant 6&24. The name itself hints at the concept: a “summary” of the same culinary philosophy, distilled into a more relaxed format. Here, the team brings the same dedication to quality and hospitality that earned its predecessor a loyal following, now in a space that blurs the line between wine bar, food bar, and restaurant.

Chef, Kitchen, and Philosophy

Owner-chef Rik van de Laar has been cooking since the age of twelve. His passion for nature and local produce drives both 6&24 and Resumé. In the kitchen at Resumé, chef Job van den Berg—a former 6&24 cook with broad experience—works closely with Rik to maintain consistency. The result is a menu built on the same high-quality ingredients from the same local farmers and suppliers, but presented more simply. As they put it: “the same quality, the same local farmers, but as simpler dishes.”

What to Expect

Resumé serves an à la carte menu all day, with no fixed tasting menus. Guests compose their own meal from a range of small plates, shareable items, and larger dishes. Highlights include cured meats from the slicer, notably Iberico products sourced directly from Jamón Appétit in Spain, and Dutch cheeses from Het Kaasatelier in Oud Gastel. The kitchen focuses on International cuisine, using top-tier produce in creative, unfussy preparations.

The wine program is a central draw. Resumé offers 12 different Champagnes by the glass and 25 still wines by the glass, alongside a deep bottle list. The bar also serves alcohol-free cocktails and draft beer. In warmer months, the terrace opens for outdoor dining.

In 2026, Resumé by 6&24 received a Bib Gourmand from Michelin, an award that recognizes good quality, good value cooking. It fits the restaurant’s ethos: refined but accessible, generous without pretense. The interior combines counter dining, lounge seating, and a convivial bar, making it suitable for everything from a quick glass of wine to a leisurely dinner. A lively wine bar in a nice spot on the Bierkade in the center of The Hague. You can enjoy both drinks and meals here. The wine bar features a lovely terrace by the water. The interior boasts an eclectic mix of various tables, chairs, lamps, and cushions. The youthful, efficient service and the frequently playing contemporary music attract younger guests. There is a great selection of wines available by the glass, and the staff's wine recommendations are excellent. Paired with our fresh sparkling wine from Portugal, Filipa Pato 3 B Blancs de Blancs, we order fried olives. These come with a cheese sauce (not listed on the menu), making the dish quite rich. After some tasty house amuse-bouches, two cold vegetarian starters arrive: a salad with kohlrabi, endive, and walnut, alongside butternut squash with ricotta cream, chestnut purée, and crispy phyllo pastry. They are beautifully presented, and especially the squash is well-flavored. The somewhat mushy potato cubes served with the salad were unnecessary. The three hot dishes that follow are again picture-perfect. For the celeriac schnitzel, a special sea buckthorn sauce is poured at the table. Unfortunately, the schnitzel isn't fried properly, causing the vegetable to absorb too much oil. That's a pity. The caramelized onion with mushrooms and crème fraîche earns high praise. The dessert, a tarte tatin with green apple ice cream, is a delicious finish. It's nice that you can also satisfy your cravings as a vegetarian at Resumé, although the menu options could be slightly more extensive.

In 2023, Rik and Saskia van de Laar opened their second establishment alongside 6&24, and it has been a resounding success. Run with the same passion and warmth, this charming spot offers a slightly more relaxed atmosphere. You can snack to your heart's content, with or without a lovely glass of champagne, enjoy a (business) lunch, or choose from à la carte dishes that are appetizer-sized. All of this unfolds in a pleasant ambiance, invitingly furnished, with ample space between tables and waterfront views from the front. We indulge in paper-thin slices of Jamón Appétit, carved à la minute and served in 50-gram portions, just like other selections from the slicer. The mojama also earns high praise. This cured tuna is slowly but surely conquering Dutch menus, which is welcome news. The crispy-fried sweetbread with savoy cabbage and furikake is also delicious, adding a nicely spicy kick. From the wine list—which features no fewer than twelve champagnes by the glass, as well as twenty-five wines across various price points, ensuring there’s something for every palate—we choose an Italian Gavi di Gavi Cortese by Nicola Bergaglio. If you prefer not to drink alcohol, there is a wide selection of non-alcoholic refreshments and cocktails. Resumé by 6&24 is a valuable addition to The Hague, offering an exemplary balance of price and quality.

Restaurant 6&24, named after the birth dates of owners Rik and Saskia van der Laar, has gotten a sister: Resumé 6&24. And let's get straight to the point: it's a culinary enrichment for the city of The Hague. What a wonderful spot, and you can really taste the love for the craft. Resumé literally means 'repetition of the content, but summarized'. In practice, this translates to the same hospitality and quality as 6&24, but in a more relaxed format. You can come here for a glass of fine champagne with a bite to eat, choose from one of the 25 wines available by the glass, or sip on a non-alcoholic cocktail. You can have lunch, grab a snack, or order from the à la carte menu. Quick business lunches are also an option, all served in a super fun, retro-styled ambiance or on the delightful terrace overlooking the water. Located at one of The Hague's nicest spots, on the Bierkade. We start our evening with two different champagnes. Resumé offers no fewer than twelve varieties to choose from, and we're happy to be advised by the exceptionally skilled and friendly hostess, Saskia. We receive a beautiful Brut Nature from their house brand Guy de Forez, along with a Blanc de Blancs from Michel Furdyna. After this aperitif, we start with tuna with sesame and passion fruit, and beef steak tartare from Epe. The tuna is sublime, and the steak tartare is decent. It's just not succulent enough. Adding a little sauce would make the difference between a good and a perfect dish. Roasted avocado with papaya and curry, grilled langoustines, and short rib with pickles and curry follow. Fantastic creations and flavor combinations, which we hope will become absolute staples on the menu. We finish off with a Dutch cheese board. It's always nice when restaurants take the trouble to source cheese locally. Especially the Fiore red-rind from Boerderij Oudwijker and the Bunker Blue from Terschelling are amazing. Top address!
