The story
On the banks of the Vliet river, bordering the green fairways of the Rijswijk Golfclub, 't Ganzenest offers a setting that feels both tranquil and effortlessly connected to The Hague. The restaurant has held one Michelin star since May 2021, a recognition that speaks to the consistency and clarity of chef Erik Tas’s cooking.
Tas’s path to his own kitchen was deliberate. After working as a sous-chef in several well-regarded restaurants, he opened his own place, Bij Erik, in Leidschendam, and later 't Ganzenest in Rijswijk. At Bij Erik he earned a Bib Gourmand for honest, high-value cooking. At 't Ganzenest he builds on that same accessible quality, now with more space and a broader canvas—the restaurant also houses a small hotel and hosts weddings, events, and private dining.
The menu is built around seasonal produce, prepared with a modern French sensibility. A 4-, 5-, or 6-course tasting menu changes with the seasons, and there are à la carte options too. Standout signatures include a turbot with celeriac, lardo di colonnata, chanterelles, and truffle, and a Wagyu A5 supplement for those looking to go deeper. The kitchen also offers a bites menu with oyster preparations and charcuterie before the main meal. Dietary requirements—vegetarian and pescatarian included—are handled with advance notice, and the team will tailor a menu accordingly.
A newer addition is the Chef’s Table, installed after a full kitchen renovation in summer 2023. There are two tables: one for up to eight guests, and a more intimate one for three. Here you eat the same 6-course menu, but you watch the brigade work. It is direct, unfiltered, and a genuinely different way to experience the restaurant.
Since 2023, Tas has been one of the 25 chefs in Les Patrons Cuisinier, a Dutch collective of independent, passionate restaurateurs. It fits the ethos of 't Ganzenest: a chef-run restaurant that values personal attention as much as technical skill, and where the Michelin star feels earned, not performed.
