The story
La Nouvelle Auberge in Tilburg anchors its fine dining approach in sustainability and regional sourcing. The kitchen operates inside the Auberge du Bonheur, a four-star boutique hotel surrounded by mature trees on Bredaseweg. Patrick Verbunt started the site in 1986 with a party venue and conservatory. He expanded into a full hotel ten years later, creating a quiet retreat where guests leave the city behind.
Sustainable dishes featuring local produce drive every menu change throughout the year. This style of fine dining prioritizes fresh vegetables and regional meats, often adjusting recipes as market availability shifts. This dedication to responsible cooking secured spots in both the Gault&Millau and Michelin guides. It also earned two Radishes from the We're Smart Green Guide in 2026.
Diners gather in intimate spaces built for conversation, separated from the larger event halls used for weddings and conferences. Private dining rooms offer secluded tables where servers move at a measured pace. Wine pairing follows the same unhurried rhythm, giving staff time to explain provenance between courses. Even large corporate groups find the atmosphere restrained, allowing meals to unfold without background noise.
