The people behind the plates

Chef Robin trained at the prestigious Cas Spijkers Academie and honed his skills at Michelin-starred kitchens, including Restaurant Bolenius in Amsterdam and Restaurant One in Roermond. His style is rooted in purity of product — seasonal ingredients treated with respect and creativity. He works alongside a close-knit team that includes host Jamie, who took over the restaurant after years of experience at Riddershoeve and Kok Verhoeven, and Marcel, a neighbour who became co-owner after discovering the restaurant’s quality and charm during lockdown.
