Located beneath the Dom Tower in Utrecht is Bar Bet, an intimate establishment with a French-classical interior. Warm tones, wooden floors, and marble tables create a chic yet unpretentious atmosphere. It feels welcoming and relaxed. The kitchen adheres to a classic French style. Guests can choose between a four- or five-course menu, composed of dishes also available à la carte but offered at a more favorable price in the set format. We begin with an amuse-bouche: a choux pastry filled with chicken liver, cranberry, and pistachio. The liver pairs beautifully with the sweet cranberry, although the pistachio fades somewhat into the background. This is followed by a series of dishes served in a shared dining format. The beet jerky with horseradish and crème fraîche is an original concept, but doesn't fully convince due to the overly dominant beet and its unconventional texture. Much more successful is the Jerusalem artichoke with hazelnut, chervil, and date: playful, fresh, and well-balanced. The highlight is the guinea fowl with lavash, onion, and house jus. Perfectly cooked meat with crispy skin and a rich jus, accompanied by a young 2022 Gamay from Beaujolais that adds freshness and purity. For dessert, both the apple mille-feuille with coconut ice cream and rum raisins and the chocolate parfait with raspberry impress through their balance and refinement. We conclude with a cheese board featuring the Brebirousse, a soft sheep's milk cheese with a red-and-white rind, which truly stands out. The front-of-house team is led by several young hosts and hostesses. Friendly, informal, and sufficiently knowledgeable, though wine explanations are sometimes a bit brief. The large bar forms the heart of the establishment. You sit around it as if you're in a lively Parisian bistro, while the dishes come down from above—from the open kitchen on the first floor. In this way, the bar and restaurant flow seamlessly into one another, making it ideal for lingering and enjoying yourself. We can't wait to return!
