Where You Feel at Home

The name says it all. Heimat is a German word for the emotional bond you carry toward the place where you belong — and at Restaurant Heimat on Utrecht's Biltstraat, that feeling is translated directly onto the plate. The kitchen draws its identity from what grows and flourishes in the surrounding landscape, working with a fixed network of producers and growers who share the restaurant's commitment to the wellbeing of animals, people and the planet.

The Chef Behind the Kitchen

Niels van Zijl is the driving force here — ambitious and idiosyncratic, qualities that suit his hometown of Utrecht well. Before opening Heimat, he led the kitchen at restaurant DeZusters in Maarssen, and in 2022 Gault&Millau named him their New Chef on the Block. His foundations were laid at some of Europe's most respected addresses: the three-Michelin-star De Librije in Zwolle and the two-star Kadeau in Copenhagen. That pedigree shows in the precision of his European cuisine, even as the cooking stays rooted in the local and the seasonal.

The Menu and the Table

Heimat runs a chef's menu format that shifts with the day. On Wednesday and Thursday evenings, guests can choose between a compact or complete chef's menu (€64 or €94 per person). Weekend evenings offer only the full menu, while Friday through Sunday lunches feature a dedicated lunch menu at €74 per person. Local dairy and grains form the backbone of the cooking — so much so that gluten- and lactose-free menus are not available.

The wine list earned Heimat a Wine Spectator Award of Excellence in 2025, recognition that reflects the seriousness with which the team approaches pairing. Guests can explore the list with the sommelier or trust the house suggestions. For those who prefer to skip the wine, house-made non-alcoholic drinks and a selection of beers and ciders are also offered alongside the European cuisine.

Private dining for groups of six to twelve is available, and the restaurant welcomes reservations from Wednesday evening through Sunday lunch.

During our visit on a Sunday afternoon, Heimat is filled with cheerful, predominantly younger guests. Further inquiry reveals that lunch culture has fully taken hold in Utrecht, especially on weekends. An upbeat atmosphere pervades the calmly designed interior, which pays close attention to natural tones. In the back left, we see the cooking team led by owner and head chef Niels van Zijl working in the semi-open kitchen, and their enjoyment clearly radiates from them. Niels, who cut his teeth at top restaurants such as De Librije (Zwolle) and Kadeau (Copenhagen), cooks with a deep love for nature and maintains a steady network of suppliers who share the same ethos. There is a multi-course menu that changes regularly. Together with co-owner, hostess, and sommelier Arline Bronkhorst, we search for a fine wine from the list, and our choice falls on a Spanish Attis Lías Finas Albariño from 2023. We have no regrets about this choice, as this chameleon wine adapts perfectly to every dish. Softly roasted North Sea langoustine tartare arrives with lime in an aromatic shellfish emulsion, alongside a dried tomato XO sauce, surrounded by strawberry broth and drops of rose oil. Fresh and refined, with an umami touch that perfects the dish. This is followed by a bread course featuring three sourdough-based varieties: baguette tradition, toasted brioche, and German country bread. Accompanying spreads include chive aioli garnished with edible flowers, whipped cream with sauerkraut, and miso butter with pickled chili peppers. Both the bread and the accompaniments taste delightful, and they are quite filling. The main course is vegetarian: creamy buckwheat tempeh with grilled oak mushroom, plus a celery root and Dutch soy reduction, celery root mousseline, hazelnut, and an airy foam. This makes us want to eat vegetarian every day. We finish with a meadowsweet cream accompanying a chamomile-infused cake, a grilled apricot, almond crunch, and a sauce of honey and bee pollen. What a feast. Right on the threshold of the Top-100.

De jonge en ambitieuze chef Niels van Zijl deed ervaring op bij niet de minsten als De Librije in Zwolle en Kadeau in het Deense Kopenhagen. Maar hij keerde terug naar zijn heimat Utrecht, om er een eigen casual, fine dine-restaurant te starten, waarbij toegankelijkheid en comfort sleutelwoorden zijn, net als een eerlijke en transparante keuken. In april 2024 opende hij zijn deuren. De naam Heimat werd bedacht door zijn vriendin en refereert aan de emotionele binding die Niels heeft met 'zijn' stad. Niels kookt een wisselend creatief en licht menu geïnspireerd op de natuur. Wat buiten groeit en bloeit vormt de basis van zijn keuken en er is een vast netwerk van leveranciers aangetrokken die het welzijn van dier, mens en planeet hoog in het vaandel hebben. De hoofdrol is weggelegd voor groenten. Het interieur van Heimat is Scandinavisch, rustig met warme kleuren, veel hout en natuurlijke tinten, zodat alle aandacht naar het eten kan uitgaan. Bijzonder is dat brood als een aparte gang wordt geserveerd, want naar eigen zeggen is het maken daarvan net zo tijdrovend en aandachtvragend als de andere gerechten in het menu. Bij ons aperitief genieten we van amuses als gele gazpacho met een vleugje habanero en watermeloen-tartaar met emulsie van zwarte knoflook en gelei van soja op een zuurdesemcracker. Fijne starters! Mooi is het gerecht van hoender in verschillende bereidingen met mais, abrikoos en cantharellen. Puur van presentatie en smaak. Maître en mede-eigenaresse Arline Bronkhorst serveert daarna een vegetarische interpretatie op foie gras, bereid van paddenstoelen en cashewnoten, op texturen van wortel met sorbet van duindoornbes. Dit mag wat ons betreft een signature dish worden. Niels is een chef om in de gaten te houden. Welkom in Lekker.
