The story
In the small Brabant village of Vessem, MOUT & HOUT builds its identity around two elemental ingredients: malt and wood. The name is no coincidence. Mout (malt) is the soul of beer – the fermented grain that gives aroma, body, and warmth. Hout (wood) is the fuel for the open fire that defines the kitchen. Together, they shape a restaurant rooted in the traditions of BBQ and grill.
The open fire is the heart of the kitchen. Pitmasters work a "vuurspeelplaats" – a fire playground – where they control the interplay of wood, heat, and oxygen to coax deep, smoky flavours from every ingredient. The result is pure, honest cooking: meats and vegetables grilled over real wood embers, with smoke as a seasoning. The beer list matches the intensity, with a focus on craft brews that complement the char and richness of the grill.
Michelin awarded MOUT & HOUT a Bib Gourmand in 2026, recognising its "good quality, good value cooking". The recognition is a nod to the kitchen's ambition: delivering bold, wood-fired flavours at a fair price, without pretence. Outdoor seating lets guests enjoy the open-fire aromas and the relaxed Brabant atmosphere, making the restaurant a natural stop for anyone seeking honest, smoke-kissed BBQ and grill in the Dutch countryside.
