The story
Since 2017, brothers Raimon and Peter Ian Pot have been at the helm of Robuust on the charming Kerkplein in the Overijssel town of Vollenhove. The name means “robust,” and it fits: the cooking is direct, the flavours clear, the hospitality warm. The restaurant earned a Michelin recommendation in 2023 (and continues to be recommended for 2026), a nod to the quality and consistency they deliver.
Robuust works exclusively with the finest regional products: fish straight from Urk, vegetables from the Noordoostpolder, bread from the local baker. The menu is a surprise – a “belevingsmenu” (experience menu) of four to seven courses that changes every two months with the seasons. You can choose an all-in pairing with wines or with specialty beers, reflecting the brothers’ passion for brewing. They also run their own brewery on-site, adding a personal touch to the drink selection.
The cooking is confident and unfussy, letting the ingredients speak. Guests describe the food as “a flavour explosion” and the service as both professional and personal. The atmosphere is relaxed and welcoming – the kind of place where you feel looked after without any stiffness. Whether you opt for the full tasting journey or a shorter menu, the team ensures every detail is right.
Robuust’s inclusion in the Michelin guide since 2023 confirms what locals have known: this is a restaurant that delivers. The inspectors praised its quality and distinctive beer pairings. For anyone seeking real, delicious food in Vollenhove, Robuust is a clear choice.
