The story
On the Vijzelstraat in Wageningen, DIELS calls itself the city’s “stadsherberg” – a town inn for everyone. The kitchen is led by Dietmar Baars, who cooks with an ambition that has earned the restaurant a place in the Michelin guide. The wine side is handled by Elsko Sjabbens, and together with a sharp team they run a place that feels as serious about flavour as it is about having a good time.
The menu is built around Modern French cuisine, with a clear seasonal instinct. Starters might include a white asparagus crèmeux with hazelnut and mushroom vinaigrette, or burrata with marinated watermelon and tomato bouillon. Among the mains, there is a slow-cooked black-foot chicken with lobster and asparagus, a grilled flat iron steak with mushroom cream and red wine jus, and a lamb rump with artichoke cream and crispy wonton filled with lamb neck. Desserts stay tight and precise: a passionfruit tartlet with vanilla cream, or a chocolate pâté with raspberry and white chocolate mint cream.
The restaurant is open Monday through Saturday from 17:30. Parking is available on the Raadhuisplein directly in front, with day passes for a fixed fee so you can leave the car and settle in properly. Dogs are welcome if mentioned when booking.
DIELS is for anyone who wants more than the usual – and the Michelin Recommended award confirms that what they are doing is worth a detour in Wageningen.
