Just steps from the Oosterschelde – the tidal basin that yields the Netherlands’ finest oysters, mussels, and lobster – lies Oesterbeurs. Chef-owner Maurice Mulder runs this bright, welcoming restaurant with a sharp focus on regional seafood and the kind of hospitality that makes you feel like a regular from the first visit.
The menu reads like a love letter to the Zeeland coast. It opens with oysters: the Zeeuwse tafelcultuur oester, refined in purified Oosterschelde water, served half a dozen on ice or gratinated with green herbs and garlic. Then there is the Zeeland flat oyster 00000 – “the pearl among oysters,” full and creamy – offered in three preparations. European lobster appears in a bisque with Frapin VSOP Cognac, as a salad with truffle and white asparagus, or simply grilled with almond salsa and seasonal vegetables.
The flagship dish is the Fruits de Mer “Oesterbeurs,” a grand platter for two that includes half a grilled European lobster, razor clams, crispy gamba, flat oyster with vinaigrette, gratinated tafel oyster, grilled scallop, wild prawns, Zeeland mussels, langoustine, and North Sea crab. At €85 per person, it is a comprehensive tour of the region’s bounty.
Beyond seafood, there are options like bavette with sweetbreads and Wagyu sucade, grilled saignant. The kitchen offers four-, five-, and six-course menus, with wine pairings. The atmosphere is relaxed but polished – the kind of place where you can linger over a long lunch or a celebratory dinner.
Oesterbeurs has earned a Michelin Recommendation for 2026, a recognition that aligns with its commitment to sourcing the best of the Oosterschelde and preparing it with intelligence and care. It is open for lunch and dinner from Thursday to Sunday.
