The story

De Witte Gans: Bib Gourmand Dining in Dalfsen, Netherlands

A History Rooted in Hospitality

De Witte Gans began as a bakery and grocery in 1893, built by baker Hermannus Mans Tijhaar on a plot of land near the Overijssel canal. Over the decades, the building evolved into a café, then a discotheque, before falling into disrepair. In 1997, the Diks family purchased the dilapidated property and spent a year transforming it into the restaurant it is today. The name – “The White Goose” – nods to the many geese once raised in the region. Now run by the second generation, the restaurant expanded in 2020 with a modern wing designed by architect Pieter Diks, inspired by a traditional barn, blending contemporary comfort with rural respect.

Seasonal Cooking with a Global Touch

The kitchen team works closely with the seasons, changing the menu regularly. While the foundation draws from Mediterranean and French kitchens, many dishes carry international influences, and regional products feature prominently. This is honest, craft-driven cooking: recognizable ingredients elevated with skill and imagination. The result is a cuisine that feels both grounded and adventurous – a style that has earned De Witte Gans a Michelin Bib Gourmand since 2013, an award that recognizes excellent value and good craftsmanship.

The Dining Experience

In summer, the garden terrace is a peaceful spot to linger; in winter, the fireplace warms the interior. The team takes pride in hospitality, with many regular guests returning for a complete evening out. The wine list is thoughtful, with house wines from creative winemakers offered at fair prices. For those who prefer a lighter touch, there is a dedicated vegetarian menu that changes with the season, and vegan options are available on request.

A Place for Every Occasion

Whether you come for a leisurely lunch, a multi-course surprise menu, or the eight-course gastronomic journey, the pace is unhurried and the welcome genuine. De Witte Gans also hosts private parties and weddings, adding live music on occasion. The surrounding woods and cycling routes make it a natural stop for a meal after exploring the Dalfsen countryside. Here, contemporary hospitality meets a story that stretches back more than a century – and every dish reflects that care.
