The story
Gaptrast brings a focused, personal vision of Modern Cuisine to Bergen. Executive Chef Kristian Vangen and Restaurant Manager Øystein Ellingsen collaborate to create a dining experience that emphasizes precision, seasonality, and thoughtful progression. The restaurant is open Wednesday through Saturday, offering a single tasting menu that changes with the market and the chef’s instincts.
Wine is integral to the evening. Guests choose between an Essential pairing, a Signature pairing, or a Sommelier's experience—the latter for a minimum of four persons. A non-alcoholic pairing is also available. The wine list is curated to complement each course, and the team’s attention to detail shows in every glass. Prices range from NOK 1200 for the non-alcoholic option to NOK 7500 for the Sommelier’s experience.
The kitchen adapts to allergies and dietary preferences with 72 hours’ notice. Milk‑protein‑free and vegan diets cannot be accommodated, and menu changes may impose further restrictions. The team encourages early communication about any disabilities to ensure the best possible experience.
Gaptrast holds a Michelin 1 Star, a recognition of its high‑quality cooking and consistent execution. The award underscores the restaurant’s commitment to Modern Cuisine in Bergen, where ingredient‑driven cooking meets quiet refinement.
