The restaurant is run by sommeliers Silje Hanasand and Knut-Espen Misje together with Chef Stuart Barber, who together aim to create a workplace where everyone can be themselves, grow in their craft, and play as a team to give guests a heartfelt, personal, relaxed, and flavourful experience.
Chef Stuart Barber comes from Norfolk and has a long history working in several of England’s best restaurants, gaining broad experience on both classical and innovative kitchens. His uncompromising focus on quality, deep understanding of raw ingredients, and high technical precision define the menus at Hermetikken. The food reflects his personal philosophy: clear identity, pure flavours, and a distinct voice on every plate.
The restaurant's modern cuisine is built on local, seasonal ingredients. Sustainability is a core pillar: the team works with local producers, uses almost exclusively short-travel ingredients, and systematically reduces food waste. The menu follows the season, changing with what is best available. For those who book a table by the kitchen counter, the experience includes the OMA(K)ASE menu – loosely translated as “leave it to us” – typically starting with four snacks, followed by courses built around shellfish, crustaceans, fish, and meat, finishing with dessert and petit fours.
Wine is equally central. The wine list is curated by Silje and Knut-Espen, who seek quality, character, balance, and drinkability in every bottle. Each wine is chosen to lift and complement the flavours on the plate, made by people who genuinely care about their craft. On Saturdays, the restaurant opens for lunch with a carefully adapted menu starting at 14:00. When the season allows, the outdoor seating area opens as well.
