MIL Centro redefines Andean cuisine from its base in Urubamba, situated at 3,568 meters above sea level beside the ancient terraces of Moray. Virgilio Martínez, Pía León, and Malena Martínez designed the kitchen as a laboratory where culinary practice meets ecological research. They treat the landscape as both pantry and archive, ensuring every plate documents the specific microclimate of the Sacred Valley.

Ingredients and Seasons

The kitchen constructs its tasting menu around crops harvested between nine hundred and four thousand two hundred meters of elevation. This foundation defines their version of Andean cuisine, which relies on native tubers and grains supplied by local farmers. Chefs document agricultural cycles alongside professional cooks, merging field notes with precise fermentation techniques. A separate vegetarian progression follows identical seasonal rhythms while relying exclusively on plant matter cultivated at altitude.

Guests dine under an open canopy that frames distant mountain ridges and the quiet stone foundations of the archaeological park below.
