The story
Bolero is the latest project of Chef Fernando Alcala, a Marbella-born cook who traded a law career in Zurich for the kitchen. After training alongside figures like Arzak, he opened Kava in 2015, earned a Repsol Sun, and was named Revelation Chef at Madrid Fusión in 2019. In 2022 came Cotxino, an informal tavern, and in 2023 he opened Bolero in Bonifacio Global City, bringing his confident, modern take on Spanish cuisine to Manila.
The menu reads like a conversation between Spain and the Philippines. Start with Beef Empanadas, filled with soft, smoky ribeye. The Ricotta, Green Onion Waffle is light and crisp. Signature Stuffed Chicken Wings are deboned and packed with a spicy pork filling, served with curry mayo. For something bright, the Creamy Sweet and Sour Tomatoes pair sweet tomatoes with cucumber and a light foam. The Talakitok Crispy Ceviche with cucumber lassi uses local fish and aji amarillo – Filipino ingredients handled with a modern touch. And the Award-winning Cheesecake has become something of a viral finish.
In 2026, Bolero earned a Bib Gourmand from the Michelin Guide Philippines – an award for restaurants that deliver exceptional food at great value. The team describes it as “an honor that celebrates our passion for bold, refined flavors and the comforting simplicity of food done beautifully.” It’s a fitting nod to a kitchen that balances technique with warmth.
Bolero sits on High Street South in BGC, with both indoor and outdoor seating, counter dining, and space for private parties. The atmosphere is relaxed but polished – the kind of place where you can dress up or come as you are, and leave remembering the food.
