The story
Lore by Chef Tatung is a panata—a vow to keep the Filipino table alive, generous, and shared. Chef Myke “Tatung” Sarthou, born in Cebu, is a multi-award-winning author and passionate advocate of Filipino cuisine. Before stepping into the kitchen, he worked in journalism and music production. Cooking, learned from his mother and grandmother, became his language of love and legacy. Today, his body of work includes multiple restaurants, six best-selling cookbooks, and the multimedia platform Simpol. At Lore, that mission finds its truest form.
Located in Bonifacio Global City, Lore originally offered refined tasting menus but has since evolved into a vibrant communal dining experience. This rebirth is a renewal—a deeper commitment to the spirit of the salu-salo, the communal feast. The scent of burnt coconut, the tang of vinegar, and the crackle of pork on the grill announce a table built for kinship. As Chef Tatung says, “Food is meant to be shared. Our cuisine has always been communal.”
Chef Tatung’s philosophy of “simpol” means soulful—the quiet genius of Filipino kitchens where vinegar transforms freshness into memory, and salt and garlic turn thrift into comfort. Dishes like Adobo sa Pula (glowing with annatto and garlic) and Kinilaw na Tuna (bright with vinegar and pomelo) are deeply Filipino—recognizable, soulful, and resonant. The menu, Filipino Feasting Through Generations, follows the cadence of a gathering: small plates, broths, stews, and sweet endings.
In October 2025, the Michelin Guide named Lore among its Selected Restaurants for 2026. Chef Tatung reflects, “We never set out to impress Michelin. We set out to honor our people.” At Lore, that honor is felt in the warmth of the dining room, the grounded grace of the service, and dishes that remember, nourish, and gather.
