The story
Not-so-hidden along San Agustin Street in Salcedo Village, Makati City, Taquería Franco is a modern taquería as reimagined by Chef Miko Calo. The restaurant describes its menu as “irreverent but balanced French-forward taquería” fare, blending French technique with Mexican soul. Chef Miko Calo, named Philippine Tatler Chef of the Year in 2023, leads the kitchen.
The cocktail program is equally considered, crafted by David Ong (of The Curator and Oto) and Cedric Mendoza (Manhattan Bar, ReCraft Bar, Bar Flora) of Pourhouse Hospitality. They describe the drinks as a “five-star dive-bar cocktail program,” served in a fun and relaxed space.
Taquería Franco earned a Michelin Bib Gourmand for 2026, an award that highlights good quality, good value cooking. The restaurant’s own website prominently displays the Michelin guide link, signaling the team’s pride in this recognition.
The atmosphere aims for a balance of irreverence and polish. The space accommodates counter dining, table service, and outdoor seating, with air conditioning and a lively, fun vibe. Private events and catering are also available.
The menu is a French-Mexican hybrid, though specific dishes are not detailed on the website. The restaurant is open for lunch and dinner: Sundays through Thursday from 11am to 10pm, and Friday and Saturday from 11am to midnight. Delivery and takeaway options are listed as coming soon.
