At Taupe, Chef Francis Tolentino turns his passion for the Philippines’ bounty into a canvas. Every dish is built around local ingredients—longan, calamansi, winter melon, lambanog—treated with techniques drawn from kitchens around the world. The result is contemporary fine dining that feels distinctly of its place.
In 2026, Taupe became part of the inaugural Michelin Guide Philippines, earning a Michelin-Selected distinction. The guide acknowledges Chef Francis’s commitment to elevating Philippine produce into an art form, a recognition that came just months after opening.
Taupe’s current menu, Elements, is organized around four forces: fire, air, water, and earth. The 10-course tasting menu (₱8,000) leads with a blue crab ice cream sandwich—savory ice cream layered with chicken skin biscuit, mango gel, smoked roe, and Osetra caviar. A wet-aged hamachi course uses calamansi snow and avocado purée, touched by liquid nitrogen. Winter melon spaghetti arrives with pear, kaong, peach granita, and yuzu cotton candy. These are not just dishes; they are precise narratives of texture and temperature.
