Pawilon Towarzyski in Białystok approaches Polish cuisine with a grounded respect for Podlaskie traditions and seasonal harvests. Chef Maciej Obukowicz builds his kitchen around technical precision and local ingredients, transforming familiar flavors into refined compositions. Seasonal Plates

The kitchen’s signature lamb thigh steak arrives beside handcrafted pierogi filled with Korycin cheese and a smooth pea and mint puree. Regulars often order the braised venison shank, which combines tender meat with pickled forest fungi and a dark beer reduction. These dishes demonstrate how modern Polish cooking treats regional produce without masking its natural character. The legendary krem sułtański closes the meal, a custard finished with brandy-soaked raisins and almonds that traces back to the site’s original café operations in 1973.

Glass Pavilion Design

The dining room occupies a protected mid-century structure overlooking Planty park, originally drafted by architects Mieczysław Krzywiec and Barbara Toczydłowska. Daylight fills the volume during morning service, highlighting bottle-green upholstery and exposed concrete before evening lamps cast a warmer glow. A fully open kitchen lets diners observe the brigade working through lunch hours. The floor plan merges structural lines with practical seating arrangements for both corporate meetings and weekend dinners.
