The story
Scoria brings modern Polish cuisine to the banks of the Brda River in Bydgoszcz. Chef Patron Paweł Stawicki trained across starred venues in Oslo, London, Taipei, and Warsaw before establishing his own culinary voice here. He directs an open layout that dissolves the boundary between cook and diner, allowing guests to watch him draw out the inherent qualities of each ingredient. Head Chef Damian Hirt supports this approach with a focus on artisan precision and straightforward plating techniques.
The tasting progression highlights beef tataki paired with truffle mayonnaise and foie gras accompanied by a cherry plum confit. Home-made linguine arrives dressed with freshly shaved truffles, while the grill station handles dry-aged cuts alongside the day’s catch. Krzysztof Wichowski curates a wine selection exceeding one hundred labels to match these rich textures. Diners can follow a guided degustation route or select individual courses at their pace.
The space rests quietly along Stary Port, using natural materials and targeted lighting to create a comfortable backdrop for extended meals. This careful attention to comfort and service earned the venue a score of fourteen from Gault Millau.
