The story
Hewelke Restaurant & Bakery redefines global cuisine within Gdańsk's dining scene, guided by chef patron Marcin Popielarz. Drawing on experience from Białego Królika and Biôłigo Trusa, Popielarz constructs menus that traverse borders instead of adhering to strict regional codes. The kitchen prioritizes surprise, arranging ingredients so that distant techniques meet local sensibilities. Diners encounter a narrative driven by curiosity, where each course challenges expectations through deliberate juxtaposition.
Signature offerings illustrate this adventurous spirit, starting with octopus prepared Galician style paired with herring served Żuławska tradition. Other favorites include sea bass accompanied by a crisp green mango salad, while duck cooked Peking-style shares the lineup with rabbit prepared Sichuan fashion. These selections demonstrate a willingness to blend heritage dishes with exotic accents, creating a progression that feels both grounded and exploratory.
The restaurant occupies restored cellars of the historic Hevelius brewery, named for Jan Heweliusz, a famous Gdańsk brewer and astronomer. Raw brick walls and arched vaults frame an open kitchen, while subdued lighting ensures the minimalist decor remains inviting. An on-site artisan bakery supplies fresh bread served with roasted butter at the beginning of meals. Guests can also enjoy custom cakes or take home loaves, completing a setting where serious cooking meets generous hospitality. This dedication to quality secured a 13.5 rating from Gault&Millau.
