Ritz – A Personal Vision of Modern Cuisine in Gdańsk

On the waterfront of Gdańsk’s Szafarnia street, Ritz is the realisation of chef Basia Ritz’s lifelong passion. Winner of the first Polish edition of MasterChef in 2012, she opened her own restaurant two years later, and has since earned a Michelin Recommended distinction – a recognition that speaks to the precision and heart of her cooking.

Basia describes her approach as a metaphysical transformation of ingredients. She draws on the rich traditions of Polish cuisine, but is equally open to global influences, marrying regional patriotism with culinary curiosity. The result is a style of modern cuisine that is both grounded and inventive: seasonal, local products prepared with innovative techniques and presented with restraint and beauty.

There is no fixed menu. Instead, Ritz offers a tasting menu that changes with the seasons and the availability of the best produce. A recent sequence included amuse bouche, scallop with lobster and salsify, Dover sole with lardo and pumpkin, quail with Jerusalem artichoke and mushrooms, venison with cavolo nero and dumplings, and a chocolate pre-dessert with bergamot and pear. The wine pairing is carefully selected to complement each course.

The dining room is designed for unhurried contemplation – a space where every detail, from service to tableware, contributes to what Basia calls an “integral culinary experience”. Guests are encouraged to focus on flavour, texture and aroma, while the team, led by head chef Basia and her skilled kitchen brigade, ensures that the meal is both an aesthetic and cultural encounter.

Ritz has long been rated the top fine dining restaurant in Gdańsk by its guests. With its Michelin recommendation and a chef who continues to explore the boundaries of Polish cooking, it remains a destination for those seeking thoughtful, memorable modern cuisine.

Interior and atmosphere The restaurant is located in the heart of Gdańsk on Szafarnia Street. It is an original concept by the head chef and owner, Basia Ritz, winner of the first Polish edition of MasterChef Poland. The interior, with its large windows overlooking the Motława River, captivates with modern, refined elegance and a muted color palette. Cuisine and chef The cuisine is built around local and seasonal ingredients while honoring Polish tradition; the chef skillfully applies diverse culinary techniques to craft original, contemporary dishes. The tasting menu features eight courses alongside house-baked breads. Standout dishes include scallop with lobster and trout caviar, quail with mushrooms and lingonberry, and venison with potato, edamame, pepper, and rosemary. Service and occasions Ritz – thanks to its unique atmosphere – is an ideal setting for both an intimate dinner for two and an elegant business meeting.
