On Kraków’s oldest street, Kanonicza, the Copernicus Restaurant occupies the ground floor of a hotel whose Gothic façade and Renaissance interiors set the stage for a distinctly Polish dining experience. The restaurant describes its cuisine as “Polish court” – a refined interpretation of the country’s royal culinary heritage. Chef Krzysztof Waś, who began his career in Kraków’s restaurants, leads the kitchen, treating traditional recipes with an innovative hand. The dining room itself is a glass-covered courtyard, where an intimate library and bar invite lingering. In warmer months, the summer terrace opens onto a view of Wawel Castle, the historic seat of Polish kings. Chef Waś’s menu changes with the seasons, highlighting ingredients such as mushrooms, quails, crayfish, and asparagus. For those who want a deeper exploration, the Chef’s Tasting Menu is available in five, seven, or nine courses, each with a wine pairing option. A separate vegan tasting menu also exists, though the kitchen notes it cannot accommodate celiac diets. A lunchtime tasting menu – three dishes for 119 PLN – offers a more accessible entry point from Monday to Friday.
Copernicus has gathered numerous accolades, including a recommendation from the Michelin guide, a recognition that aligns with the restaurant’s commitment to quality and local tradition.
