The story
Hana Sushi opened in April 2015, born from a love for both Japanese and Korean cuisine. Since 2017, the restaurant has been on ul. Kupa 12 in the heart of Kraków’s Kazimierz district, where it seats 60 guests across the main dining room, a bar, and a seasonal terrace. The restaurant has held a Michelin recommendation since 2016, recognition for its high standard of service and consistent quality.
The kitchen is led by Head Chef Brandon (Dong Gi), who brings a winding culinary path to the stoves. Brandon began his career as a kitchen assistant in a small Japanese family restaurant in the United States, then spent years mastering mainstream fusion sushi before building a celebrated restaurant in Kraków from scratch. After a period running a small, constantly busy restaurant in South Korea, he returned to Poland to take the helm at Hana Sushi. He now works alongside Sous Chef Wojtek, whom he trained years ago, and an experienced team including Executive Chef Włodek and Head Chefs Wojtek, Michał, and Kamil.
Hana Sushi is not just about sushi – the menu spans Japanese and Korean dishes, from ramen and udon to grilled meats and banchan. The Premium Sushi Box (34 pieces) is a signature offering, paired with a bottle of sake or Korean soju. The Chef’s Nigiri Omakase Set presents a selection of ten premium nigiri chosen by the chef. For a deeper dive, the Hana Sushi Set combines futomaki, uramaki, nigiri, and sashimi. Main courses include Hokkaido Miso Ramen, Tempura Udon, Gyudon, and Unagi Don (available half or whole), while the Chirashi Don layers tuna, salmon, sea bass, ikura, and avocado over sushi rice. Korean influences appear in dishes like Royal Teokbokki and Yangneyom Chicken.
The space is straightforward and welcoming, with an open kitchen and a bar that invites guests to watch the chefs work. The seasonal terrace, set in the middle of the restaurant, adds an airy note in warmer months. Hana Sushi also offers takeaway, making it easy to enjoy their cooking at home.
