The story
NOAH – from the Hebrew word for rest, peace, and delight. Opened in 2023 in the heart of Kraków’s oldest Jewish district, Kazimierz, the restaurant sits in a neighborhood of seven synagogues. The name reflects the philosophy: a place to slow down, share food, and create new culinary memories. Chef Wiktor Kowalski leads the kitchen, bringing together two distant culinary cultures – Polish and Israeli – in a space that feels both welcoming and intentional.
The menu at NOAH is a conversation between Polish terroir and the vibrant, spice-laden street food of Israel. Seasonal and artisanal ingredients from local producers meet techniques and flavors inspired by Tel Aviv’s markets and Jerusalem’s alleyways. This is not fusion for its own sake; it’s a genuine, unpretentious meeting of traditions. The result earned the restaurant a Michelin Bib Gourmand in 2025, a recognition of good quality, good value cooking that rewards the curious diner.
Dishes are designed for sharing. Plates arrive in the center of the table, encouraging conversation and communal eating. The interior balances elegance with a casual touch – round marble tables, sofas, and an eclectic design that feels curated but not stiff. The main hall seats 42, with a second, smaller room offering a view of the open kitchen. The atmosphere is lively yet relaxed, ideal for a long dinner with friends.
The menu changes with the seasons, but expect plates like grilled eggplant with herbs and pomegranate, creamy feta with labneh and harissa, or hummus topped with grilled grapes and crispy chickpeas. A beef tartare with chives and pickled wild garlic flowers, sea bass in harissa with rose petals, and lamb kebabs with cinnamon and tahini all reflect the kitchen’s ability to weave Polish and Israeli notes into a coherent whole. Desserts, such as lime-rose mouhallabieh or goat yogurt mousse with red currants, end the meal on a light, fragrant note. Every dish emphasizes the restaurant’s core idea: that eating together is a celebration.
