The story
Agata and Michał Kuter opened A nóż widelec in 2010, driven by a deep love for Polish cuisine. What started as a personal passion has grown into one of Poznań’s most respected dining destinations. The restaurant’s name – a playful Polish phrase meaning “a knife and fork” – signals both its focus on the craft of eating and its warm, unpretentious character.
The kitchen is led by Michał Kuter, a chef whose training at London’s Westminster Kingsway College and experience in Michelin-starred restaurants such as Chez Bruce, Le Gavroche, and Petrus gave him a rigorous foundation. Yet his cooking is unmistakably Polish. He interprets traditional flavours with modern technique, always respecting the “domowe smaki” – the tastes of home.
The menu changes with the seasons, reflecting what is available from a carefully curated network of regional producers. Vegetables come from Ogrodnictwo z Tradycjami, a family farm practising natural cultivation. Fish arrives from local aquaculture farms, and meats from trusted suppliers like Kwiecińscy (pork) and Szybki wół (beef). Cheeses are crafted by Wańczykówka, and preserves by Folwark Wąsowo.
This commitment to provenance is central to the restaurant’s philosophy. Michał Kuter describes his approach as “from farm to table,” valuing simplicity, naturalness, and respect for the ingredient. Many dishes have become signatures that guests travel miles to enjoy, though they evolve with the seasons. The menu offers à la carte options, a lunch menu, and a tasting menu, alongside a carefully selected wine list and artisanal nalewki (Polish liqueurs) from Karol Majewski.
The restaurant occupies two floors of a house on ul. Czechosłowacka. The main dining room seats 30 guests on the ground floor, while upstairs a private VIP room offers a more secluded setting with its own entrance and facilities. When the weather warms, an outdoor garden opens, surrounded by greenery and flowers – a quiet spot for a leisurely meal.

A nóż widelec earned a place in the Michelin Guide Poznań selection in 2023 and retained the recommendation in 2024, making it the only restaurant in the guide’s first Poznań edition to serve traditional Polish cuisine. The Michelin inspectors highlighted its modern interpretation of Polish cooking, grounded in local products and seasonal rhythms. For the Kuters, this recognition aligns with their own values of tradition, region, and partnership with local farms. It is a quiet affirmation of the work they have done since 2010 – and a reason for Poznań diners to discover what makes this kitchen special.
