The story
In Poznań, TU.REStAURANT is a place built on the idea of sharing the best of what the team has to offer. At its heart is the Fiedor family – Karol, Adam, Maksymilian, and Gustaw – who have channeled their shared passion for hospitality and architecture into creating a restaurant that feels both personal and elevated.
The kitchen is led by Chef Filip Cwojdzinski, whose career includes stints at Michelin-starred restaurants in Manchester and Ireland, as well as representing the Polish National Culinary Team, where he won two silver medals at the 2020 Culinary Olympics. He describes his approach as a daily pursuit of perfection, driven by what his heart tells him and what guests want, all while growing his team for the culinary success of Poznań.
The restaurant’s philosophy is refreshingly direct: they serve food the way it’s served at home – in the middle of the table, encouraging guests to taste whatever they’re in the mood for. This spirit of generous sharing is underpinned by a commitment to the highest quality ingredients, a charming atmosphere created by a team that loves working together, and close cooperation with local craftsmen and artists. This dedication has not gone unnoticed. TU.REStAURANT has been recognized three times in the MICHELIN Red Guide, most recently earning a Bib Gourmand for good quality, good value cooking.
