The story
L’Entre Villes, open since 2014, has earned its place on the Michelin Poland guide – recommended for 2024 and again for 2025. The recognition speaks to the consistency and ambition of a kitchen that blends European technique with local Polish ingredients. Chef Sławomir Hahn leads the team, and the restaurant’s own words describe his approach as one where “style and innovation coexist.”
Hahn’s cooking is rooted in French cuisine, but the plates tell a story of the Baltic coast and Polish forests. The a la carte menu moves from a venison tartare with smoked egg yolk and saffron milk cap mushrooms to a delicate trout fillet from “Fier” served with sauerkraut, leek, and porcini in a brown butter and walnut sauce. The tasting menu, priced at 390 zł, offers a curated journey through these flavours, with optional wine pairing (260 zł or 440 zł for the premium selection). A separate plant-based tasting menu is also available, featuring dishes like boletus mushroom cream soup and a turnip steak with vegetable demi-glace.
The restaurant occupies a villa with a “fairy-tale, green garden” full of flowers and plants – a quiet escape from the city bustle. Indoors, the space includes four banquet halls that can host up to 200 guests, a VIP lounge known as the Cigar Room (ideal for business meetings or private evenings with cognac and whisky), and what the team calls the best-stocked wine cellar in the Tri-City region. Sunday brunch is served with live music, and the kitchen also offers catering and private dining for weddings, communions, and other celebrations.
From the amuse bouche to the homemade bread and butter, every detail at L’Entre Villes reflects a commitment to craft. It is a place where French culinary tradition meets the flavours of Pomerania, and where the Michelin star remains a clear, ongoing ambition.
