The story
Piernicova by Witkowski brings modern Polish cuisine to a restored building in Toruń’s Gothic old town. Chef Bartłomiej Witkowski opened the space in 2019, shaping it around seasonal produce and regional traditions. His background includes training across Europe and a spot on Top Chef Polska, which informs his approach to blending local ingredients with subtle Oriental and Mediterranean techniques. This foundation earned the venue a 11.5 rating from Gault&Millau and recognition in both the Poland 100 Best Restaurant list and the Polskie Skarby Kulinarne contest.
The Polish kitchen here balances heritage recipes with precise technique. Appetizers like the Toruń-style herring pair pickled apples and gingerbread mustard with bonfire potatoes, while tuna tataki introduces sesame dashi mayo and yuzu gel to familiar formats. Roasted meats and careful preservation methods anchor the main courses. Goose gizzards simmer until tender alongside truffle mashed potatoes and honey-roasted hazelnuts, and duck confit rests on beetroot dumplings before receiving a gingerbread orange reduction.
Muted tones and classic lines define the dining room, creating a space that feels both refined and comfortably lived-in. The open kitchen sits at the center, anchoring the floor plan. Staff members guide diners through a curated wine list featuring sparkling selections and carefully matched European bottles. Finished meals often conclude with house-made desserts like the Tiramisu po Toruńsku, which folds Katarzynki cookies and coffee liqueur into a velvet cream.
