The story
Alon Omakase stands as the only venue in Warsaw dedicated exclusively to Edomae omakase, where the chef guides guests through a silent dialogue of ingredients. Alon Than brings nearly two decades of discipline to this intimate counter, drawing on lessons from his first master, Maruyama San, who taught him that movement flows through every piece of sushi. His precision earned him the gold medal at the World Sushi Championships in Tokyo in 2015, a title he now carries as an ambassador appointed by the All Japan Sushi Association. The kitchen operates without a printed menu; instead, the selection shifts with the seasons, relying on the highest quality fish prepared solely as nigiri and sashimi, deliberately excluding tempura or heavy sauces to let the raw materials speak.
Guests settle onto stools along a minimalist bar overlooking the preparation area, where they witness the full sequence of twenty to twenty-five small dishes arranged over two and a half hours. Each course arrives as a precise portion of vinegared rice topped with seafood selected by Master Alon, reflecting a philosophy where the best ingredients require no embellishment. The service charge sits at ten percent, while the fixed tasting menu costs 1250 zloty per person, excluding beverages. Because creating each piece demands time and concentration, the restaurant enforces a strict reservation window of two months and requests punctual arrival to preserve the rhythm of the evening.
The space reflects the culinary approach, offering twelve seats within an elegant, minimalist interior designed to keep attention on the artistry at the counter. Gault&Millau awarded the restaurant a score of 14.5, noting the authentic fine dining execution and the focused environment where guests are encouraged to maintain silence and refrain from wearing perfume. Beyond the weekly Thursday through Saturday service, Alon extends this format to private gatherings of up to twelve diners or offers omakase experiences delivered directly to a client's home. Every detail, from the seating arrangement to the conduct standards expected of guests, reinforces a singular purpose: an unbroken immersion in the traditional techniques of Japanese sushi making.
