Simplicity and substance

BAKEN operates as a distinctive artisan bistro in Warsaw, built on a belief that food should be accessible and honest. What began as a small bakery on Żurawiej expanded into Browary Warszawskie under owner Aleksandra Dojnikowska, who designed a space merging Scandinavian minimalism with practical comfort. The kitchen adheres to a 'simple as f*ck' philosophy, focusing on ingredient quality rather than elaborate techniques.

The bread and the chef

Chef Michał Toczyłowski anchors the menu with a focus on fermentation and local sourcing. House bread uses only Polish flour, water, salt, and a sourdough starter kept alive for three years. Extended fermentation allows the team to maintain a reliable flavor and texture throughout the year. Fresh produce arrives from regional partners, including dairy from Marian Nowak and vegetables from the Majlert family, while eggs come from Roźwienica.

Light and natural wines

Large windows fill the room with daylight, illuminating light wood and concrete that frame colorful artwork and curtain partitions. Evening service shifts toward comfort food served alongside Pet-Nat wines from Polish and foreign vineyards. These naturally sparkling bottles provide a crisp counterpoint to the hearty dishes. The restaurant's commitment to genuine products and welcoming atmosphere contributed to a Gault&Millau rating of 11.
