The story

Bez Gwiazdek Warsaw: Modern Polish Regional Cuisine | Michelin Recommended

Polish regional cuisine, reimagined

At Bez Gwiazdek in Warsaw, chef Robert Trzópek is on a mission to rediscover the forgotten tastes of regional Poland. The name—Polish for "Without Stars"—signals the restaurant’s unpretentious spirit. Yet the cooking is anything but ordinary. Trzópek, who trained at world-renowned kitchens including Noma in Copenhagen and El Bulli in Spain, brings a refined, modern sensibility to classic Polish dishes.

The result is a tasting menu that changes monthly, each edition spotlighting a different area of the country. Expect dishes like the oberiba of Opole, the hekele of Silesia, or the blind fish of Wielkopolska—regional specialties rarely seen outside their home provinces. The presentation is clean and minimalist, letting the quality of the ingredients speak. The team sources produce directly from small farms and trusted suppliers like Pan Ziółko and the Majlert family, ensuring everything is seasonal and eco-minded.

A vegetarian version of the tasting menu is always available, and the wine list leans toward Central and Eastern Europe, with a focus on ecological and biodynamic bottles from small producers. Guests can order 75ml tasting measures, making even the priciest wines accessible, and pairings are offered but never forced.

Bez Gwiazdek has earned a Michelin Recommended award for 2026, a fitting nod to a kitchen that achieves high standards without chasing stars. The atmosphere is casual and welcoming, the service warm and informed. It’s modern cuisine that stays true to its roots—proof that Polish cooking has far more to offer than the familiar classics.
