The energy of simplicity

At Dyletanci, the kitchen philosophy is built around the product. The team aims to interpret, not to change. This means sourcing the highest quality ingredients, including organic vegetables from their own farm in Magnuszew near Warsaw. The idea is to create a dining experience that is stimulating through its quality, taste, and balance — a straightforward yet refined approach to modern cuisine.

The kitchen

Chef Rafał Hreczaniuk is one of Poland's most recognized chefs. He gained experience in Michelin-starred restaurants in Dublin, including Chapter One and L'Ecrivain, and completed an internship at the two-star La Fermata in Milan. His focus is on light fish and vegetable interpretations. The menu changes with the rhythm of nature, using ingredients from carefully selected local producers. Sous chef Artur Ogrodziński, a long-time collaborator, co-founded Dyletanci and oversees the farm’s vegetable production. He is also known for his charcuterie, prepared in traditional Italian style from start to finish.

The wine list

Dyletanci boasts one of the most extensive wine lists in Poland, with over 1,100 selections. The focus is on biodynamic and organic estates, particularly from Burgundy, the Roussillon, and small Italian producers. Champagne is a special category, with nearly 70 labels from small growers like Ulysse Collin and Jacques Selosse. The restaurant also offers a curated selection of German and Austrian wines, Polish wines from Dom Bliskowice, as well as distillates, craft beer, and ciders.

The setting

Located in the Powiśle district, between the Vistula River and its escarpment, the restaurant occupies a townhouse that borders two park spaces. The interior balances structure and spontaneity, with light Zalto glasses, handmade ceramics, and works by Polish graphic artists. Every detail is meant to make guests feel comfortable — a space where the energy of simplicity is felt throughout. The restaurant has been recognized by the Michelin Guide and Gault & Millau, and is a regular on The World's 50 Best Discovery list.

Interior and Atmosphere The restaurant is located in the heart of Warsaw. It is elegant and cozy at the same time – muted tones, natural wood, and the warm light of the lamps create a sense of comfort. Kitchen and Chef Dyletanci's kitchen is modern, and the head chef prioritizes the ingredients above all else – top-quality, seasonal, and local. Among the dishes that surprise with their flavor combinations are labrax with green beans and summer truffle, curry lobster with zucchini blossom, or wagyu beef with wild broccoli. Service and Occasions À la carte, lunch, and tasting menus are available – the latter served from 5:30 PM; you can order both wine pairings (the list features up to 1,100 labels) and non-alcoholic beverages. Dyletanci is a restaurant suitable for a business lunch (on select days), a gathering with friends, or a romantic dinner.
