The story
Rest.Baczewskich in Warsaw presents a refined take on Lviv and Warsaw cuisine inside a surviving 1895 neorenaissance palace. Workers renovating the Aleja Szucha location uncovered vintage J.A. Baczewski vodka bottles in the basement, a discovery that directly inspired the restaurant’s founding in 2014. The venue honors Leiba Bachales, who established his original distillery in Lviv in 1782 and eventually secured imperial manufacturing privileges.
The kitchen applies this same historical rigor to Lviv and Warsaw cuisine, balancing preserved techniques with modern plating standards. Diners often start with herring presented on butter-fried potatoes, accompanied by herring caviar, pickled apples, and fresh shallots. Hearty staples include Ukrainian borscht with pampushky resting in a light garlic sauce, double pierogi filled with forest mushrooms and potatoes, and grilled octopus paired with a roasted pepper mousse. Every meal concludes with the house signature Baczewski cake.
The dining space channels interwar elegance through refined décor and a functional piano that occasionally accompanies local cabaret acts. Large windows open toward a sheltered garden, softening the stone façade with greenery. Behind the service counter, shelves display a curated selection of aged liqueurs and inherited family recipes for herbal infusions. This careful balance of architecture, beverage history, and traditional Eastern European cuisine recently drew attention from Gault&Millau reviewers.
